Ingredients
1 cup (100g) rolled oats (or opt for brown rice flakes or quinoa flakes for a gluten-free alternative)
1 1⁄4 cup (320g) Greek yoghurt (or choose a dairy-free alternative)
1 cup (120g) Pure Plant Protein Vanilla
1 cup (160g) frozen mixed berries or fresh
1 tablespoon toasted shredded coconut
Method
Divide the oats evenly between glasses or jars.
Blend the yoghurt and protein powder in a separate bowl until you achieve a smooth consistency. If needed, add a little water to achieve the desired texture. Spoon this mixture over the oats.
Top each jar with the frozen mixed berries or fresh ones, then refrigerate for at least 15 minutes, or leave them in the fridge overnight for a hassle-free morning.
When ready to serve, give the ingredients a good mix. Adjust the consistency by adding a little more water if necessary. Sprinkle the toasted coconut over the parfait, and there you have it – a delicious and nutritious treat!
